Sel Roti: Nepalese Rice Donuts

   Sel Roti is Nepalese national sweet made out of  rice flour. It is unique too, until now I haven't heard of any country making this. This is made in most of the household, during the country's one of the biggest festival Tihar. Back in the Country, I still remember my father-in-law's saying that it doesn't even feel like Tihar, if  there is no Sel Roti. I learned to make this wonderful sweet from my Grannys and of course my mom too. All of them are awesome cooker of their time. Here in USA my friends like my Sel Roti. I really appreciate their compliments.

Ingredients for Making SEL Roti

6 cups – Sticky Rice (Jasmine)
1 cup - Sugar
2 table spoon – melted Ghee
¼ teaspoon – Cadmium
1 table spoon – finely chopped coconut
Oil for frying.


Process:

Soak rice for 12 hours. Then grind rice, sugar and ghee and make a thick batter and add cadmium and coconut. Leave the batter overnight or at least 2 hours in the refrigerator. Heat oil in the pan over medium high and when some smoke starts to come then oil is right for frying. 




TRY this recipe and enjoy the tasty SEL Roti.

This Tihar, I may have to cook a lot as my sis-in-law have asked for it. I am looking forward to it and our wonderful festival Tihar too.
Cauliflower...

      Couple of days before, I bought two big size cauliflower on top of that today I bought couple more as the deal is even better. This temptation to buy, when there is great deal is killing me. Now, I don't know what to do with all these cauliflowers. My family size is small to be exact only 3 people and one cauliflower veges-curry last for almost a week, darn. What I gonna do with all those. So I searched in the You Tube, for the new recipes for dishes with cauliflower and came up with this one.

Cream of Cauliflower Soup with Bacon Gremolata


 I tried this and already in love with the taste. Try this and I bet you all will gonna say the same. Enjoy...

Every Cloud has a Silver Rim

This is very truth about all existence whether it be living or non living. Good or bad or even worst it have a some thing one can learn and may use for upgrading yourself. eg. Moon it gives light in the darkness and its processes of phasing out, teaches us about the life cycle. From moon one can learn to be inner strength or light in their fellow man when they are going through their bad phase of life. With phasing out one can learn that no matter what, be yourself and do good things. Up and down in the road of life comes and goes.

One can also learn from those people who weaves the crown of thorn as one proverb goes "God loves those hands who weaves the crown of thorn than those do nothing". So keep your eyes open to everything, there are teachers out there all over. When my kids complaining about something I always said to them "stop and learn something about it or about them."

Had lived with History:

Hovering through fotoes of historic pictures of late Shah Dynasty, I had some flash back of the moments with them. Some we have to read as a part of history and with some had a chance to meet them. I still remember giving bunch of flowers to queen Ratna on her Birthday maybe in when I was in grade one or two. Did march pass on the King Mahendra's Birthdays, democracy day, Constitution day and so on days. What, I remembered most was sitting in heat in the Tudhikhel and never had chance to see the kings close-up as I always somehow used to be in rightmost line where you just go straight without looking at them. I still remembered King Mahendra taking round in Jeep in the those occasions. Had witness marriage possession of late king Birendra and his coronation. I took part in PT for his coronation. I graduate with honor and I thought I would be seeing both of them closely but this time also I got medals from Minister of Education. But I am grateful to KMC, giving me chance to present 1st ever website of KMC to then crown prince Dipendra. He was so handsome and intelligent. Working for KMC, I also had a chance to be closed in the presentation by KMC to Ganendra. Paras inaugurated the 23rd Remote sensing programme hosted by Nepal and we were participants in this programme.

had a Bad Day

Today, I am very disturbed by the situation I was in. A few moments of misunderstanding can destroy your self-esteem, peace of mind, rest of the day and night's sleep. Your years of good will and hard work could dissolved in the matter of moment. How could your manager judge you by the bitchy mouth of your colleague and customers? Customer are always right and so do the bosses. They are only the ones who is flawless and has power to judge us and take action and rest of us just falls prey to their judgement.... Do you still think that you live in 3rd world where we are free?

"Eat, Pray and Love"

Finally, today I had a chance to watch this movie "Eat, Pray and Love". I just couldn't concentrate on this movie, I don't know why? All the actors played well. My lack of concentration maybe because it is exposing bare truth of life. For being healthy you must eat healthy food and enjoy what you are eating without being conscious of gaining weight or lets put in other word dieting. Till last year, my son used to enjoy eating daily home cooked food. But now he is conscious of calories, sugar, fat ...etc. etc. intake. For peace of your mind, one should pray or meditate. This will help us stay focus on what we need to do in the life and prioritize. It is well said in this movie that "God reside within yourself and meditating will help us find him". Anyways to enjoy life you have to do things that gives happiness to others. My concentration even disperse here in writing this too will continue from here onwards whenever I will able to processes my thoughts....promise

Facebook

I am kind of person that don't like to communicate with others that openly and easily. In other word I am introvert and shy. But googling for these words I found ... "Being shy and being introverted aren't the same thing, although they may look the same. An introvert enjoys time alone and gets emotionally drained after spending a lot of time with others. A shy person doesn't necessarily want to be alone, but is afraid to interact with others. ." - By Whatever... I am here not discussing about the word introvert or shyness, here I want to write about my facebooking. My kids had started complaining about my recently acquired habit of Facebooking as ... you FB to much, you waste your time hovering in it... you are so into it. I used to reply to them "No" ... but they argues with the proof -as your most visited site is FB. Yes, I am addicted with it and you know what, I never forget to quickly browse through it's status even just for few minutes. I agree that it had been part of my everyday routine. But I swear, I don't spend to much time on it ... only reason my most visited page maybe that I used to stay "logged in" until, I shut down my laptop. Anyways I love FB... It had made possible to stay in contact with my loved ones and friends n families.
